Helene’s carrot cake
Here is one of my family’s heirloom… My precious grandmother’s carrot cake recipe.
It’s so good I can eat it all by myself. I think the secret ingredient is what makes it so delicious! Along with the cream cheese frosting 😉

Ingredients
- 1 1/2 cup flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup sugar
- 2/3 cup vegetable oil
- 2 beaten eggs
- 2/3 cup finely grated carrots
- 1/2 cup crushed pineapple with juice (the secret ingredient!)
- 1 teaspoon vanilla
Frosting
- 1/3 pack of cream cheese
- 4 tablespoon butter
- 1 teaspoon vanilla
- 1 cup powdered sugar
Instructions
- Preheat oven @ 350F.
- Grease a baking pan.
- In a bowl, mix together all dry ingredients except the sugar.
- In another large bowl, mix the sugar, beaten eggs, oil, carrots, pineapple and vanilla.
- Add the dried mix to the large bowl and stir for about 2 minutes.
- Put cake mix in the greased pan and bake for about 35-40 minutes
- Let cool for 10 minutes then remove pan.
- Wait at least 1 hour before frosting.
Frosting
- Mix together the butter and vanilla until creamy.
- Add cream cheese and then, powdered sugar. Mix well.
- Ice cake, then, refrigerate.
