Helene’s carrot cake

Here is one of my family’s heirloom…  My precious grandmother’s carrot cake recipe.

It’s so good I can eat it all by myself.  I think the secret ingredient is what makes it so delicious!  Along with the cream cheese frosting 😉

  1. 1 1/2 cup flour
  2. 1 teaspoon baking powder
  3. 1 teaspoon baking soda
  4. 1/2 teaspoon cinnamon
  5. 1/2 teaspoon salt
  6. 1 cup sugar
  7. 2/3 cup vegetable oil
  8. 2 beaten eggs
  9. 2/3 cup finely grated carrots
  10. 1/2 cup crushed pineapple with juice (the secret ingredient!)
  11. 1 teaspoon vanilla
  1. 1/3 pack of cream cheese
  2. 4 tablespoon butter
  3. 1 teaspoon vanilla
  4. 1 cup powdered sugar
  1. Preheat oven @ 350F.
  2. Grease a baking pan.
  3. In a bowl, mix together all dry ingredients except the sugar.
  4. In another large bowl, mix the sugar, beaten eggs, oil, carrots, pineapple and vanilla.
  5. Add the dried mix to the large bowl and stir for about 2 minutes.
  6. Put cake mix in the greased pan and bake for about 35-40 minutes
  7. Let cool for 10 minutes then remove pan.
  8. Wait at least 1 hour before frosting.
  1. Mix together the butter and vanilla until creamy.
  2. Add cream cheese and then, powdered sugar. Mix well.
  3. Ice cake, then, refrigerate.
